“瑞 (Mizu)” means organisms, specifically plants, are full of holy vitality, and “秀 (Ho)” means it is the best of all and distinguished. “穂 (Ho)” in the word “稲穂 (Ina-ho; rice stalk)” is also derived from 秀. We gave the name “Mizuho” to this noble Junmai Daiginjo brewed with the best quality sake rice and precious Hyakunensui through mastery skills of the toji and the brewery workers. Let us also make a toast to the beautiful alternative name of Japan “豊葦原瑞穂国 (Toyoashihara Mizuho-no-Kuni; Country of Rice) .”

Correlation between Sake Rice “Yamadanishiki” and “Mizuho”

Only the very best of Yamadanishiki grown at Sakamoto section in Taka-cho, Hyogo prefecture is used. We concluded that rice quality and sake quality are closely tied after investigating sake rice evaluations by Masami Tokuhira, who is a leading authority on Yamadanishiki cultivation as well as an adviser for us. The sakes of good rice years tend to be aged well, and the prices remain high.
